Here's my great Gnocchi recipe, so easy too.
2 Idaho russet potatoes cooked, put through a ricer, salt to taste and set aside to cool.
1 lg egg whisked
3/4c white flour unbleached
Mix egg and flour into the dough with your hands lightly, do not over work the dough, add flour slowly until easy to handle.
Then cut into 4 sections, roll each piece to desired size, cut into small pieces. Dip a fork into flour and crease the top of each gnocchi to leave the impression on it and roll off the fork.
Cook in salted, boiling water 1-3 min. Take out and drain.
Simple marinara sauce: 1 lg can San Marzano tomatoes, crush tomatoes add olive oil, salt, pepper, basil, garlic.
Top with shredded Fontina cheese! Yummy
