Golden Hummus
― 1 medium sweet potato ∙ 19 oz can chickpeas ∙ 2 garlic cloves ∙ 1 large lemon ∙ salt and freshly ground blackpepper ∙ 1 tbsp dark sesame oil ∙ Peel sweet potato and pierce with fork. Microwave on high until very soft about 4-6 minutes. Chunk up and place in food processor. Rinse and drain chickpeas. Add to processor. Add 3 tbsp lemon juice, oil, garlic, salt and pepper.
