A Brief Guide to Cajun Cooking - Some people may associate Cajun cooking with blackened and overcooked chicken, but that’s not what the real Cajun cooking is all about. To start with, Cajun cooking is named after an ethnic group found in Louisiana. Cajun people are descendants of some of the first white men to settle North America, coming from across France to settle in Nova Scotia before settling in South Louisiana. That may be the reason why Cajun recipes are basically a fusion of food found in different cultures and traditions with distinct French flair. http://www.greatamericanpublishers.com/cajun-cooking.htm
